Major chocolate players are betting big on sugar reduction partnerships, and the space remains a hot topic in 2022. Recently, Israel-based DouxMatok — a key startup in the sugar reduction space — announced a strategic commercial partnership with U.S. chocolate ingredient supplier Blommer Chocolate. These two players will collaborate to release a chocolate-flavored chip containing 50% less sugar than Blommer’s standard products using DouxMatok’s patented (US8911806B2) Incredo Sugar solution. DouxMatok produces Incredo Sugar for commercial sale through a partnership with Canada’s Lantic Sugar, after a planned partnership with Südzucker never materialized. Blommer will roll out the new reduced-sugar product to its network of customers in North America.
