Sugar reduction is a long-standing white space. Though many solutions are available, none have met the varied needs of each use-case. In this report, we evaluate four sugar reduction methods using proprietary scoring criteria across six parameters. Our analysis shows that though front-runner solutions like biobased stevia and rare sugars are promising, work is left to be done to move solutions into widespread use. Case studies emerging from primary research indicate that partnerships around production scale-up, process optimization, regulatory, and distribution are essential assets to building an ecosystem capable of moving next-generation solutions forward.
